April Recipe...Orange-Pineapple Cake

For a special springtime treat, delight family and friends with this delicious recipe!



Heavenly Orange-Pineapple Cake

1 yellow cake mix; One 6 1/4 oz. can mandarin oranges, do not drain;
1/2 cup vegetable oil;
4 whole eggs, slightly beaten


In a large bowl, blend cake mix, oranges, oil, and eggs with electric mixer. Beat for two minutes on medium speed. Bake at 325 degrees in gtreased and floured (2) nine-inch cake pans or a 9 x 13 pan for time recommended on cake box. When cool, spread with pineapple frosting (see below) and refrigerate until served.


Pineapple Frosting


20 oz. can crushed pineapple in heavy syrup, do not drain; 1 small Jell-o Vanilla instant pudding; 9 oz. carton whipped topping


In medium bowl, mix pineapple and pudding until thick. Fold into topping.
