June Recipe...Southwestern Shrimp Dip in a Lettuce Bowl

Okay...we know it's not Southwestern whitefish...but this is so tasty you won't miss the whitefish!Southwestern Shrimp Dip in a Lettuce Bowl1 Iceberg Lettuce Head1 lb cooked salad shrimp, rinsed & drained1/2 cup finely chopped red bell pepper1/2 cup salsa (hot!)1/2 cup canned niblet corn, drained1/2 cup chopped green onions2 Tbsp chopped fresh parsley1/2 cup mayonnaise1/3 cup sour cream1/2 tsp lemon juiceCrackers & Veggies of your choice
Cut out core and trim 1" slice from core end of lettuce head. Take out center leaving 1/2" thick shell. Wrap in moist paper towel to chill. Mix all other ingredients in bowl and chill for at least 1 hour. Place lettuce bowl on a platter. Spoon dip into bowl. Arrange veggies and crackers around lettuce bowl.
